Carrot Cake Energy Bites
These scrumptious bites are absolutely delicious!! They taste like little bites of carrot cake, but they’re made using only whole foods ingredients and are sweetened with a touch of dates.
The oats in this recipe are a galactogogue (read supportive of breastfeeding!), and the warming spices are also helpful after birth, so these would be a great one handed snack to prep ahead for postpartum!
Although if you’re prepping during pregnancy, make sure to make extra you can enjoy now when you get a craving for something sweet.
And of course also prep plenty extra for your toddlers— they’re going to love them too. :)
Use this recipe and roll them into balls or press them into your freezing molds (or use an ice cube tray) for little squares that feel extra fancy.
Ingredients:
-1 cup carrots (about 4 carrots)
-1/3 cup pitted dates (you can easily remove pits yourself)
-1/2 cup rolled oats (use sprouted and dried if you can)
-1/3 cup almonds or cashews (use sprouted and dried if you can)
-1/2 teaspoon vanilla
-1 teaspoon cinnamon
-1/2 teaspoon cardamom
-1/4 teaspoon ginger
-pinch of sea salt
-1/3 cup unsweetened coconut flakes
Optional ingredients:
-Collagen powder or other protein powder, chia seeds, ground flax seed, help hearts, mushroom powder, ashwagandha powder, any of your favorite super foods!
Directions (using a food processor)
-Shred carrots into food processor using shredding blades (the ones that look like a cheese grater).
-Swap out shredding blades for regular mixing blades (the ones that look like those in a blender).
-Add dates and nuts and blend up for one minute.
-Add all remaining ingredients (except coconut flakes) to food processor and mix for another 30 seconds or so.
-Scoop out batter with a spoon and form mixture into little balls using hands (I did about 1 inch in diameter), or press into trays to make littles squares.
-Roll balls in coconut flakes or sprinkle flakes on on top of trays.
-Place in the fridge for at least 30 minutes to help solidify. Enjoy!
-Alternatively place directly in the freezer for longer term storage.
Best to store in an airtight container. Eat from the fridge within 1 week. Store in the freezer for 6 months.
Directions (withOUT a food processor)
-Grate carrots into a large bowl.
-Blend dates + almonds in a food processor or blender (~1 min in Vitamix on low. I
added a spoonful of grated carrots to help it blend smoother).
-Add all ingredients to carrot bowl and mix. Use both your hands to kneed into a dough-
like mixture and blend everything together.
-Form mixture into little balls (I did about 1 inch in diameter) or press into trays to make littles squares.
-Roll balls in coconut flakes or sprinkle flakes on on top of trays.
-Place in the fridge for at least 30 minutes to help solidify. Enjoy!
-Alternatively place directly in the freezer for longer term storage.

-Enjoy!!! Eat them as a snack, healthy dessert, take them to work/on the road with you,
or bring them to a potluck/party! They're so cute, people love them! :)
And if you’re enjoying these treats during early postpartum, make sure to let them sit out for a few minutes before you enjoy them so they’re not too cold (we gotta respect our warming principles during early postpartum!).
